LECTURES (Two-hours)

Cornerstones of a Healthy Diet
We will explore our food system and discover where food comes from, how it is grown, processed and brought to market. You will learn how to read food labels and understand what the ingredients mean. We will discuss basic nutrition--proteins, carbohydrates, fats, vitamins, minerals and water and learn how to make sure you are getting the nutrition you need without sacrificing flavor and satisfaction.

Refining Your Healthy Diet
This lecture is about taking your healthy diet to the next level. The business of living requires that we change in order to grow, and our diet has to change as well to accommodate our lifestyle. You will evaluate your diet in relationship to your current lifestyle and make the necessary enhancements to have renewed energy and health.

Overcoming Food Addictions
Nutritional imbalances, low self esteem, stress and overeating all contribute to food cravings and addictions. This is an opportunity to do some honest soul searching to define areas in your life that are contributing to your addictions. Then we can discuss health practices that will allow you to take control of your health and set you on your path to wellness.

Becoming Vegetarian, Vegan and Raw
If you are ready for change, but don't know how to make the changes you want, we will show you how. We will show you how to properly combine foods to provide balance and assure optimal nutrition and energy. You will learn how to gradually add more fruits, vegetables, seeds, nuts and grains to your diet in a way that is emotionally and physically satisfying.

Let Food Be Thy Medicine
The cure for illness and disease is a healthy lifestyle. Fruits and vegetables are one of our best superfoods as they are packed with antioxidants and phytonutrients that optimize nutrition, balance hormones, improve brain function, boost metabolism and strengthen immunity. Learn what foods naturally contain the nutrients that promote healing from asthma, high blood pressure, high cholesterol, Diabetes II and yes even cancer, and how to incorporate them into your present diet.

We will explore all aspects of health including consciousness, diet, cleansing, sleep, stress management and exercise. Next we will identify your personal obstacles, challenges and limitations. Then we will empower you with the tools for change to remove boundaries and overcome obstacles.

Balancing a Totally Raw Lifestyle
Many people are concerned about getting enough nutrition from a plant-based diet. A plant-based raw diet can be nutritionally adequate when varied and adequate in calories. We will discuss specific dietary needs and food sources, food combining, acid alkaline balance and food portioning.

We will show you step-by-step how to design an eating plan tailored to your unique lifestyle using the plant-based food pyramid as a guide. Participants will sample raw food dishes that embody these principles.

Creating Tasty and Balanced Raw Dishes
You will learn how to balance nutrition and flavor by incorporating the five tastes, herbs, spices, seasonings and flavors. We will show you how to determine which plant-based raw ingredients to substitute for highly processed, refined and cooked ingredients to achieve desired texture equivalents. We will reveal preparation methods including marinating, blending, fermenting and dehydrating that will give your texture equivalents of baking, sautéing, marinating and frying to ensure a finished product that looks good, smells good, tastes good and feels good. You will discover insider secrets about creating many different dishes from base ingredients and how to successfully plan, shop, store, and prepare dishes with minimal effort and waste. Recipes and generous samples of dishes prepared provided. Demonstrations include:

Chef's Training classes offer hands-on experience and an expanded curriculum that includes kitchen set up, knife skills, sanitation, the five tastes, ingredient substitutions, texture equivalents, recipe development, meal planning, plating and presentation.

Students will prepare soups, salad dressings, sauces, breads, entrees, pates, pilafs and desserts both individually and as a group. Workbook and meals are included.

  • Raw Chef Intensive (1 day)
  • Raw Chef Certification (3 Days)

Students receive A Certificate of Completion after satisfactory completion of the 3-day Chef Certification Program.
